About eggs

The egg gives the chicken inside it all the nourishment it needs. The egg is good food for us too. There are proteins, vitamins, minerals and fats in it and just in the right proportion.

The amount of vitamins A and D in the egg depends on the feed the hen gets, that of D vitamin depending also on the hen's exposure to the sun. The egg is rich in amino-acids (protein). It is very good in combination with cereal foods because cereal foods lack many amino-acids. Combined with the protein of the egg the cereal protein is made better use of by our body. Its physical and chemical properties are such that the egg can be used in a large number of dishes.

We usually keep eggs in a refrigerator. For frying it is best to take them directly from the refrigerator, for the white will spread less at fridge temperature. But when used for cakes they should be at room temperature, for they will mix better with other ingredients.

Eggs are similar to fish as the protein in both is cooked at about 70° С. That is why it is so easy to overcook them. When we boil an egg the water does not actually have to boil. When frying an egg use butter. Oil reaches a much higher temperature and makes the white of the egg hard and unpleasant to eat.

The green colour found in an overcooked egg is the result of sulphur in the white and iron in the yolk. They combine and produce the green ferrous sulphide. These are some of the physical and chemical properties of the egg.

How wool is made

After shearing on a sheep-farm the fleeces are sorted out. One and the same fleece has wools of different qualifies, the harsher ones coming from round the neck of the sheep. At the mill a fleece is cut into smaller pieces, each grade going into a separate bin. Next the grease and dirt are washed away. After that fleeces are dipped sulphuric acid and then dried at a very high temperature. This is done to rid the fleeces of the burrs. Becoming brittle they break easily and are then shaken out as dust.

Acid and other chemicals are added to the greasy water to separate the grease out. The grease is used in the production of cream, polishes, soap, etc.

Next the wool is sprayed with oil. This is done to hold it together and to reduce the friction and static electricity when the wool passes over the machinery. Then it passes over a series of rollers with fine metal teeth which tangle and straighten the wool fibres in turn, at the end of the process the finer teethed rollers are used. Thus a soft, gauzy, sheet of wool is made. This process is called carding the wool. Then the wool passes between long leather strips, which pull out the fibres and roll them into a loose rope of wool ready for spinning on a machine called a mule. The mule draws out and twists the rope several times, before it is wound on a bobbin.

The bobbins are set up on the weaving looms. One set of threads, called the warp, goes from end to end of the loom. Another set of threads, called the weft, goes in and out of the warp threads with the help of a special long bar with teeth called a shuttle. This is how we get the wool for our clothes.

Food preservation methods

Drying. One of the oldest methods of food preservation is by drying, which reduces water activity sufficiently to delay or prevent bacterial growth. Most types of meat can be dried. This is especially valuable in the case of pork, since it is difficult to keep without preservation. Many fruits can also be dried; for example, the process is often applied to apples, pears, bananas, mangoes, papaya, apricot, and coconut.

Smoking. Meat, fish and some other foods may be both preserved and flavored through the use of smoke, typically in a smokehouse. The combination of heat to dry the food without cooking it, and the addition of the aromatic hydrocarbons from the smoke preserves the food.

Freezing. Freezing is also one of the most commonly used processes commercially and domestically for preserving a very wide range of food including prepared food stuffs which would not have required freezing in their unprepared state. Cold stores provide large volume, long-term storage for strategic food stocks held in case of national emergency in many countries.

Vacuum packing. Vacuum-packing stores food in a vacuum environment, usually in an air-tight bag or bottle. The vacuum environment strips bacteria of oxygen needed for survival, preventing the food from spoiling. Vacuum-packing is commonly used for storing nuts.

Chicken

Chicken is the meat derived from the chicken. It is the most common type of poultry in the world. Typically, the muscle tissue (breast, legs, thigh, etc), livers, hearts, and gizzard are processed for food. Chicken feet are commonly eaten, especially in French and Chinese cuisine. Chicken wings refer to a serving of the wing sections of a chicken. Chicken eggs are also commonly eaten.

Whole chickens are marketed as fryers, broilers, and roasters. Fryers are the smallest size, and the most common as chicken reach this size quickly. Broilers are larger than fryers. They are typically sold whole. Roasters, or roasting hens, are the largest chickens sold and are typically more expensive. They are prepared in a method similar to a turkey or roast.

Chicken is also sold in dismembered pieces. Pieces may include quarters, or fourths of the chicken. A chicken is typically cut into two leg quarters and two breast quarters. Each quarter contains two of the commonly available pieces of chicken. A leg quarter contains the thigh, drumstick and a portion of the back; a leg has the back portion removed. A breast quarter contains the breast, wing and portion of the back; a breast has the back portion and wing removed. Thighs and breasts are sold boneless and/or skinless. Dark meat (legs, drumsticks and thighs) pieces are typically cheaper than white meat pieces. Chicken livers and/or gizzards are commonly available

Pasteurization, creaming and homogenization

When raw milk is left standing for a while, it turns "sour". This is the result of fermentation. Pasteurization is used to kill harmful micro-organisms by heating the milk for a short time and then cooling it for storage and transportation. The process called after French scientist L. Pasteur is a carefully controlled mild-heat treatment. Pasteurization of cow milk initially destroys any potential pathogens and increases the shelf-life. Pasteurized milk must be stored cold by both suppliers and consumers. Dairies print expiration dates on each container, after which stores will remove any unsold milk from their shelves. In many countries it is illegal to sell milk that is not pasteurized.

Upon standing for 12 to 24 hours, fresh milk has a tendency to separate into a high-fat cream layer on top of a larger, low-fat milk layer. The cream is often sold as a separate product with its own uses. The fat globules rise to the top of a container of milk because fat is less dense than water.

Milk is often homogenized, a treatment which prevents a cream layer from separating out of the milk. The milk is pumped at high pressures through very narrow tubes, breaking up the fat globules through turbulence. Homogenized milk tastes blander but feels creamier in the mouth than unhomogenized. Homogenized milk may be more digestible than unhomogenized milk
